Troy is very near and dear to Fishmonger Jo. He has been involved in the Hawaii food scene ever since his days with Sam Choys when he was Corporate Chef and responsible for opening countless restaurants for Sam. Keep your eye on this chef as he is involved with many Hawaii restaurants as a culinary consultant. Some of his current work includes Owner of Troy's Real Cuisine, Chef of Big G's Catering and Event Planning, and most recently, Managing Partner of Da Farmer and The Chef, a joint venture with Roy Yamaguchi and Hawaii's favorite farmer Dean Okimoto of Nalo Farms.

Colin Nishida at Side Street Inn may be one of Hawaii's best kept secrets. "Side Street" is one of the best places to hang out on Oahu, whether for UH Football games on TV, Karaoke or just for a night cap. His famous style of "Doing Comfort Food Right" is well known to Honolulu foodies. Side Street Inn's fried rice and pork chops are celebrated as Hawaii's best and this is the place where Oahu Chef's and other dignitaries like to eat and unwind. This, of course, speaks volumes to the food and atmosphere you'll find at this Honolulu landmark. We'd tell you where it is, but then again, why ruin a good thing? I just might lose my seat.

Fukui, Honolulu's rising star in the world of island cuisine, has gained a great deal of notoriety in the past
few years. Chef Fukui helped open L'Uraku in 1996 and in November 2004, teaming up with Hawaii's own Master Sommelier Chuck Furuya (Vino Italian Tapas and Wine Bar), opened Hiroshi Eurasion Tapas. Located at Restaurant Row in Honolulu, Hiroshi's is best known for its European-Asian Fusion Tapas and fine wine selection.

D.K. Kodama
D.K. has been growing almost as fast as Fishmonger Jo (all right, that might be just a bit of an understatement). Since expanding his family's Maui sushi business to Oahu in 2000, D.K. has steadily built his restaurant empire by adding D.K.'s Steakhouse as well as teaming up with Master Sommelier Chuck Furuya and Hiroshi Fukui to bring us Vino and Hiroshi in Restaurant Row at Oahu's original Sansei Seafood Restaurant and Sushi Bar site (upon relocating Sansei to Waikiki). We really shouldn't mention D.K. without acknowledging his mother. Mama Kodama is without doubt one of the most spirited and genuine personalities in Hawaii's culinary scene. She never forgets a face and mine lights up every time we meet and she says, "Hi, JoJo!"

Another
new restaurant was opened in August of 2001, Le Bistro in the
Niu Valley Shopping Center. Alan Takasaki and his wife Debbie
have created a very intimate dining venue on Kalanianaole Hwy.
When you visit Le Bistro, be sure to try the Manila clams they
are simply irresistible as are many of Alan's French and Italian
creations.

hails from France and his accent, unmistakable. However, Eric
Leterc is no stranger to Hawaii. He has lived and worked in the
islands since 1990. Jo considers Chef Eric one of her favotites
because of their close working relationship. He is currently
Executive Chef for the Pacific Club where his Hawaii Regional
Cuisine is turning a lot of heads. Chef Eric is world reknowned,
has participated in numerous television shows, has prepared
meals for dignitaries around the world and was even responsible
for Bill Gates' wedding feast.

Alfredo Lee
Half Italian by birth, Chef Alfredo Lee grew up surrounded by the outstanding cuisines of Florence , Italy . From an early age, he learned about quality produce, meats and seafood and discovered his great passion for preparing Italian food. Trained extensively in a variety of Italian cuisines from 12 distinct culinary regions, Lee trained in Italy with 24 different chefs from all regions of the country.
With 18 consecutive years of experience in fine dining Italian kitchens in California and Las Vegas, including the Canaletto Restaurant at the Venetian Hotel and Il Fornaio Restaurant at the New York New York Hotel, Lee has worked in Hawaii at Spada Bar & Restaurant and Buon Amici Restaurant before joining Sergio's Italian Restaurant in the Hilton Hawaiian Village as executive chef.
Fishmonger Jo likes to refer to Chef Alfredo as "The Dancing Chef" from the first time they met at Spada in Downtown Honolulu where there was always plenty food, wine and music to dance to. Because of his accent, Chef Alfredo refers to Jojo as “Yoyo”!
